Ricotta-Stuffed Squash Blossoms


We have never been fans of Zucchini but planted some in Yakima mainly to hide a pump head in the vegetable garden.  The two hills of zucchini are very prolific.  When I bring them into the office to share they instantly disappear.  Although we are not fond of the Zucchini’s we are very fond of the zucchini blossoms.  Fried Zucchini blossoms are good all by themselves but we like to add a tomato coulis sauce that adds a bit of tang.
