Petrale Sole Albert

This is one of Rocke’s favorite fish recipes.  Whenever we find fresh Petrale Sole in the market we savory each mouth watering bite.  The Sole is very delicate, the bread crumb crust is crispy and the sauce with the vermouth and tarragon is light and buttery.  The flavors melt in your mouth with a light contrasting crunch from the topping.
